Since 2000 Claudio Olivero has been producing organic eggs in the Piedmont countryside in the small village of Monasterolo di Savigliano. His chickens are free-range and fed entirely with organic ingredients produced on the farm: wheat, corn, barley, alfalfa, hemp and line seed. SANBAY, a 100% organic zabaglione (a typical Italian custard dessert), was born out of Olivero's high quality organic eggs. Inspired by traditional recipes, Olivero decided to use only the noblest of ingredients in order to produce a unique zabaglione: his own organic egg yolks, high quality organic cane sugar and a special white passito wine from Sicilian organic wine consortium Valdibella. Olivero has managed to infuse his family's extensive farming tradition with innovative techniques and creative ideas, hence producing an original and exquisite dessert with an international appeal.
