Organic Shoyu made from purely Japan-grown organic ingredients stands for only 0.005% of shoyu market in Japan, and is very premium. Our organic shoyu is aged for at least 1 year in huge cedar barrels carried over 100 years to keep traditional taste and flavor. No additives or preservatives are added to ensure quality, safety, natural taste and flavor in our shoyu.

Since 1902, YAMAKI JOZO has produced soy sauce and miso following centuries-old methods without additives or preservatives. This is truly our way of production using over 70 huge cedar barrels. Unlike many organic companies these days who use imported soybeans for low cost, we use only selected Japan-grown organic ingredients, which represents 0.005% of the market for soy sauce, and less than 4% for miso market..
