Pastad’Alba is established in the heart of Langhe hills in 2006 thanks to the insight of its founder Dario and his wife Rosangela, expert in natural medicine and healthcare: to give birth - as family-run business - to an organic artisanal pasta workshop where tradition and innovation meet.

The constant efforts for finding fresh and high quality raw materials and - as a consequence - the excellence of our products is what characterize us the most. The daily contact with our clients, the flexibility of our organisational structure and the constant aim of improving are a plus.
Dario - with its great innovation skills - closely follows the production daily: it is from his inspiration that all the products that you can find on our catalogue have taken shape, starting from our classics coming to the most original ones.
Rosangela – thanks to her studies in the field of natural food and her constant research for innovation – gave birth about 8 years ago to the most recent 100% gluten free certified product line which is realized in a new and separated lab.
We strongly believe that the quality of our products starts from the selection of raw materials. Therefore, the selection of them is not left to chance, but rather is the result of of an ongoing selection work. This has always been our strength: we use to work with stone milled flours from certified organic agricolture – biodynamics at times – among which you can find whole flours, ancient grains, 100% legumes flour.
In our pasta workshop, tagliolini and tagliatelle are craftily nested, in keeping with tradition. Short shapes - instead - are bronze-drawing which gives the typical pasta surface roughness of our products, making it more suitable to hold sauces and condiments. A slow drying process at low temperature for at least 20 hours is the final main step.
The final result is a rich tasting product that - thanks to a careful manufacturing process at low temperatures – preserves all its important organoleptic and nutritional properties. The packaging aswell is not left to chance: simple and essential, it gives great visibilityto the product, while preserving its freshness.
