Savory, aka "Shio Koji", is made with Koji (fermented rice malt), brine then aged. Ginger and Chili, aka “Shoyu Koji”, is with Koji infused with ginger or chili then aged with traditionally brewed soy sauce. Use as an alternative to salt/soy sauce for any type of cooking and pickling. It makes an excellent natural tenderizer for fish and meat. Overall it reduces the need for salt while enhancing Umami flavor.
