Freekeh is an ancient Palestinian grain that has become a hot new superfood. This wholesome specialty passed down from generation to generation is flame- roasted green wheat that is sun dried, then crushed. Since the wheat is harvested green, it is naturally higher in nutrients, especially fiber and protein.

MAFTOUL – HANDCRAFTED GOODNESS
Maftoul is a traditional artisan food made from
whole wheat bulgur and flour. Canaan Women’s Cooperatives make Maftoul according to tradition
by spreading bulgur on a tray, sprinkling it with water, then dusting it with whole wheat flour and hand rolling the bulgur into pearls. Maftoul is steamed in a colander, then dried so this handcrafted goodness can be shared with the world.
Traditionally, Maftoul is prepared with chicken stock, tomato sauce and chick peas, a favorite winter meal in Palestine. Enjoy its satisfying texture topped with your favorite stew or served cold as a salad tossed with fresh herbs and dried fruit.
ZA'ATAR – THE PERFECT ACCENT
Za’atar is the most beloved spice mix in Palestine. Za’atar is traditionally eaten for breakfast with olive oil and fresh whole grain flat bread. Canaan Women’s Cooperatives make Za’atar according to tradition with freshly harvested and dried oregano, roasted sesame seeds, and sumac.
The fresh aroma of oregano, acidity of sumac, and nutty flavor from sesame add up to a winning combination of texture and flavor. Za’atar pairs perfectly with olive oil as a delicious marinade for meat or zesty seasoning on vegeta- bles that springs to life with flavor. Sprinkle it on cream cheese, yogurt or toasted bread for the perfect accent.
