For more than 150 years, Gebr. Baldauf (Bros. Baldauf) have stood for the highest quality of cheese and traditional values.
Proprietor Georg Baldauf is the head of the company, which was founded in 1862: “We are the only fifth generation family-run cheese company specializing in production of hard cheese in Germany.”
Baldauf processes their cheese using the best Allgäu hay milk from organic farms.
Fifteen hay dairy farmers certified by Bioland supply the Alpine village dairy in Grünenbach: Here we uphold a long tradition of producing artisanal and speciality cheeses. We use our own cheese cultures to achieve our age-old traditional flavour. When he joined the company in 2011, Georg Baldauf revived this tradition.
Gebr. Baldauf take pride in maintaining tradition and carrying it into the future. Their long-term aim is to preserve artisanal cheese-making in Allgäu. This also secures the livelihood for organic dairy farmers whose work contributes to maintaining a beautiful cultural landscape.
