The fields of three associated farms, all cultivated by organic farming method, provide all the necessary fodder feed our cattle. The dairy transforms only Bio milk from our cows, that are Frisona Italiana and Pezzata Rossa. Every whole Parmigiano-Reggiano cheese produced by Casearia di Sant'Anna is branded and identified by a matriculation number, which is the month and the year of production; moreover, a progressive number is branded on every whole cheese, for a safe and careful Traceableness. So it is possible to go back to the working day of the whole cheese in the dairy, and to the stable from which the milk comes.

Recently, a new dairy in Anzola Emilia (Bologna) has been aquired; this is furnished with modern technologies for the production and the storage of Parmigiano-Reggiano cheese.
