Our Company, Acetaia Borgo Castello Srl is a subsidiary company of Toschi Vignola Srl, food production company with 72 years of experience in the food&beverage sector and a wide range of products for all kinds of consumers. Acetaia Borgo Castello was founded to produce and supply Aceto Balsamico di Modena IGP, but also condiments and creams based on Balsamic Vinegar of Modena. Organic Balsamic Vinegar of Modena Gino Toschi is produced in Savignano sul Panaro (Modena) and the company has been awarded the following certifications: ISO 9001/2008, IFS (International Food Standard), BRC (Global Standard) and BioAgricert for the organic nature of its products. All products are approved by the CSQA quality certification agency, which oversees products with protected geographical identification (PGI), and are also recognised as meeting the Halal Global standard.

Our product range includes also: Condiments and Creams with Aceto Balsamico di Modena PGI, Red Wine Vinegar, White Wine Vinegar, and Apple Cider Vinegar.

THE THREE RINGS OF THE GINO TOSCHI VINEGAR CELLAR

Because of its respect for local traditions and great sensitivity to the lifestyles of its international customers, the company has created balsamic vinegars that are stringently gluten-free and contain no GMOs, as well as a line of Balsamic Vinegars of Modena PGI that are strictly organic.

The “Three Rings” that have become the symbol of the Gino Toschi Vinegar Cellar were inspired by the magnificent Hall of the Rings in the Medieval Castle at Vignola, which is located near the Cellar. The Three Rings stand for Consistency, Purity, Loyalty - concepts that have been handed down over the centuries and are particularly suited to qualifying the special characteristics of the Balsamic Vinegar of Modena produced by the Cellar. Gino Toschi is the father of the company founders, a fact that demonstrates the long, important tradition of the brand and the strong attachment of this noble condiment to the area where it originated.

BALSAMIC VINEGAR OF MODENA PGI

Recognised by the European Commission in 2009 as a product deserving protected geographical identification, Balsamic Vinegar of Modena PGI is produced using a special process that employs concentrated and/or cooked grape must, aged vinegar that is at least 10 years old, and wine vinegar. The micro-climate on the hills in the Modena area, carefully selected raw materials, and maturation in Slavonia oak barrels give rise to a unique product that is impossible to imitate.

The entire line of Balsamic Vinegars of Modena from Gino Toschi is produced in full compliance with PGI regulations, which guarantee that the musts are obtained only from Lambrusco, Sangiovese, Trebbiano, Albana, Ancellotta, Fortana and Montuni grapevines; that the

product is refined for a minimum of 2 months to over 3 months; and that it passes the test specified in the PGI monitoring plan. The PGI mark is the consumer’s premier assurance of the origin, quality and ageing of authentic Balsamic Vinegar of Modena.

THE DIAMONDS OF GINO TOSCHI

The Balsamic Vinegars of Modena IGP from Gino Toschi are the result of a skilled process that combines adherence to PGI regulations on production with the know-how of a famous vinegar cellar, consisting of little secrets and time-honoured procedures. Great skill in detecting variations in the concentration of the cooked must and in the length of ageing lead to vinegars that vary in thickness and have different nuances in flavour. That is why Balsamic Vinegars IGP from Gino Toschi are characterised by the number of “diamonds” on the label. They range from 1 to 4 and extend up to the Gemma Nera vinegars, in which the concentration of must and the thickness

are highes.

ORGANIC BALSAMIC VINEGAR OF MODENA PGI

Although careful selection of the finest raw materials is our calling card and starting point, an increasing awareness of new lifestyles that emphasise proper nutrition has led us to offer a more extensive range of products. That is why our Balsamic Vinegar of Modena IGP is both organic and gluten-free, and is perfect not only for vegetarians and vegans, but also for people who prefer to use organic foods exclusively.

Made with grapes grown by organic farms, produced according CEE 834/2007 regulations, and certified by BIOAGRICERT. Ideal for those who love this starkness and for those who use organic foods on a regular basis. We recommend it for crudités, for a dip for raw vegetables and salad.

We are also able to provide Organic-NOP Balsamic vinegar of Modena PGI.
