AS LIGHT AS THE WIND
Extra thin pasta originates from a centuries-old tradition started in the Northern Italian region Marche: the windy weather in this region often caused the pasta to break during the drying process. In order to avoid this, very thin pasta was created which dried quickly in the wind due to its lightness. A virtue was made out of necessity and the extra thin pasta was sought after all over Italy because of its filigree shape.
Our selection of extra thin pasta is produced based on the same traditional process. Just like in the old days, this extraordinary pasta is wrapped in special paper by hand and, therefore, retains its unique shape and delicate taste of high value ingredients.
