Sometimes we confuse the terms control and certification, we commonly talk about controlled company and certified company, as synonyms. In the organic sector, the control is an obligation by law, having the scope of verifying the compliance with the standards in order to suppressing possible frauds. The certification instead is voluntary and depends on the results of the control. The active members involved in the certification process are: the standards, that fix the quality of the product or the process; the company, fulfilling the quality and the compliance with the standards; and the agency, that controls the quality and the company conformity. The responsibility over the certification belong to the supplier, that is to say, to the company that puts the certified product in the market.

In order to getting the certification as product from organic agriculture, the company should have observed the organic standards during a period of “conversion to organic agriculture”. This period longs for at least two years before sowing the product, or three years before the harvest for perennials different from grass-land. The starting date for the conversion period is the notification date. During the conversion period, but not before twelve months after the date of notification, the product can be certified as “product in conversion to organic agriculture”. After the conversion period is finished, the product can be certified using the words: “product from organic agriculture”.

It is also possible to certify a product coming from wild harvest. This is possible only if the harvesting area is free from risks of pollution, it is far enough from conventional cultivation areas, it is under the same control process as the other agricultural productions and the competent authority has been notified in order to registering in the appropriate list. The certification will be granted only after the verification through inspection to the production area and eventually some analysis of the product. The “product certificate” is the document which certifies that a batch or a certain quantity defined in a specified document, has been produced following the organic standards according to the actual legislation. It is granted under written request from the controlled company.
