The Portobello mushroom is basically an oversized champignon, which has a unique flavour due to its lamellar structure: significantly stronger than smaller champignons. Small champignons do not have open gills and are therefore milder in taste. The Portobello is perfectly suited for the grill as an alternative to meat, the strong and crisp texture corresponds to that of meat rather than that of mushroom. Despite all this, the Portobello mushroom is a purely natural product! The Portobello poses different challenges to the grower: they have to be harvested at exactly the right moment, when they have grown to a large enough size, but not too late, while this would negatively influence the freshness and shelf life of the mushrooms. Right after the cap of the mushroom opens itself fully, the Portobello can be harvested.
