Teff, or Tef, is a cereal hailing from Ethiopia and Eritrea, where it has been farmed and used since ancient times. Teff boasts important nutritional properties: it is rich in fibers, calcium and iron.
Due to its small dimension (teff is the smallest grain in the world) it is milled without being peeled, so that no protein or nutritional property get lost during the process. Moreover, this cereal is completely gluten free.
For these reasons we decided to use it along with another important cereal, rice, aiming to create a unique and healthy Italian specialty.
