Red lentils are iconic to Italian’s Christmas/winter holiday. They are healthy for several reasons: first of all, as all legumes do, they are very rich in proteins, making a great substitute to animal proteins which are of-ten rich in saturated fats and cholesterol.
Moreover, lentils have a well-balanced content of carbohydrates, fibers, proteins, and they have a low glycemic index.
We studied a way to transform these little seeds into pasta, without modifying all their nourishing proper-ties, and without adding any other ingredient but lentils themselves. The result is a tasty Italian specialty, organic and gluten free certified.
