The cooked ham with truffle if calissificated High Quality.
It is obtained from the pork thigh, the same dedicated to the production of Parma row ham, cut before the femur, deprived of the trotter and de-boned.
Inside the cutting space, after the de-boning process, it is inserted a knob of truffle which properly characterizes the slice. Then the hams are put in special molds which give to the product the characteristic pressed pear-shape. The steam cooking follows and, once finished, the hams are cooled down and directed to packing. It is made by 100% Italian pork meat from our breeding farms;
