The PROSCIUTTO DI PARMA BIO is a Protected Denomination Origin product. Only the fresh thighs of well bred pigs, controlled carefully during the seasoning time and that give the undoubtedly sweet taste, can aspire to the crown.
For Its Parma, Salumificio Pedrazzoli, selects the best thighs of its heavy pigs, marks them with its slaughterer brand and the one of the Certifying Body, then it makes them seasoning in the typical area, between the stream Stirone and the river Enza, at 900 meters height.
The organic Parma hams of Pedrazzoli comes from a seIection of pigs selected Italian races, favouring the rustic one with coloured fur. Grown in organic breeding, all the pigs – with their ear-plate and progressively numbeedr- are bred in open air and rigorously OGM free. For this reason, the meats of these pigs are ripened, robust and grant a better quality of the finished product.
The Parma Ham of Salumificio Pedrazzoli is totally without preservatives. The only row materials are: good meat, sea salt carefully measured, time, ventilaed and little humid air. The seasoning time takes 10/12 months according to the size.
At cutting, the slice is soft, very aromatic, encircled from the white fat part, with sweet and sapid taste.The aroma is delicate, with sweet taste, fragrant and characteristic.
It is ideal row, cut more or less thin depending on tastes. Produced since 1996, has gained in 1997 the award for Innovation and Tradition .
