Buckwheat flour is a high-fiber and high-protein alternative to white flour. It is also higher in many essential vitamins and minerals than white flour. Since buckwheat flour is not a wheat product, many people with wheat allergies are able to eat buckwheat pancakes. Provided it has been processed separately from wheat products, it is also naturally gluten free.
