Obtained from the manual harvesting of the surfaced oil (about 2-3%) which spontaneously forms on the surface of the olive paste immediately after pressing the olives.
The outcrop view is green with a tendency to golden yellow.
It opens to the nose with mildly delicate herbaceous fruity notes with hints of green olive.
The taste is perfectly consistent with references to artichoke and almond.
Excellent on steamed fish, shellfish salad and fresh cheeses.
