Manna honey is unfloral honey, this means it is not “made” by the industrious bees from the nectar of flowers, but from the sap of trees which can be found in the sweet secretions on leaves, small branches or bark. It is the sweetness of trees.
Manna honey contains several minerals, essential oilsand a more powerful flavour as compared to the other types of honey.
The colour of manna honey is usually dark with red or greenish reflections, its viscousness is higher. Unlike the floral honey (acacia, linden tree, polyfloral etc.) which is levogyre due to the fruitose, manna honey is clockwise, not so much because of the glucose but because of the sugars characteristic to manna honey: melesitose, raffinose and erlose.
The therapeutical characteristics of manna honey, due to its rich composition of minerals and bioflavonoids, are, besides the therapeutical characteristics of floral honey, stronger anti-inflammatory, antioxidating, immunostimulating, laxative, cleanser characteristics, they stimulate the regeneration of the epithelium, endothelium and cellular membranes, being more recommended for the diseases of the immunity system, catching diseases, bacterial diseases, viral diseases, dermatological and degenerating diseases. It is the most recommended for the local treatment of wounds.
