Up in the hill above the northern Japanese town of Saitama lies YAMAKI JOZO, we have produced soy sauce and miso following centuries-old methods without additives or preservatives since 1902. This is truly our way of production using over 70 huge cedar barrels. Unlike many organic companies these days who use imported soybeans for low cost, we use only selected Japan-grown organic ingredients, which represents 0.005% of the market for soy sauce, and less than 0.5% for miso market in Japan.
