One thing is clear - we like bread that really tastes like bread. As an ecological bakery from Fulda, BIO BREADNESS GmbH produces frozen bakery products in organic quality for the ready-to-bake sector of the retail and catering industry.
Our bakery products consist mainly of wheat and spelt. They are baked with flour from our own mill in a stone oven. As you can see, we attach great importance to organic ingredients without additives and sustainable farming practices.
We would like to offer our organic bread rolls and breads to as many people as possible and have deliberately combined traditional production methods with state-of-the-art technology in our production process. And because we always take a lot of time for the best flavour, the dough for our baked goods also gets the rest it needs. We allow it to rise for over 24 hours, in order to achieve its special taste.
We give our bakery products enough time so that you can hold the best organic products in your hands. Efficiently manufactured products and just-in-time completion are indispensable for the bake-off sector in retail and catering. And we do this on a large scale - thanks to state-of-the-art technology and optimum production processes, we specialise in the manufacture of large quantities. In addition to our "SlooOW" and "gutes gut gebacken" brands, we also produce our products under private label for retail customers.
TIME IS FLAVOUR
Good bread takes time. We clearly see time as the most important ingredient for the special taste of our products. We give our organic ingredients enough time to mature before they are processed without additives, so it is not surprising that our dough also has a maturing time of over 24 hours. This is how it develops its aromatic taste and, as it is baked in a stone oven, it develops its unique crust.
BIO BREADNESS is a young and innovative company. Inspired by the original baking tradition, we optimize our production processes with the latest technology. Our strength lies in knowing where handicraft is important and when efficiency is important. This results in the special taste of our baked goods. At the same time, our production process enables us to produce in large quantities.
As a dynamic food company, we are passionate about taking responsibility for our common environment. That is why we only use ingredients from organic farming, flour from our own mills and natural products with a recipe that does not contain additives such as enzymes. In addition, we are closely networked with the organic farming associations; promote seeds and breeding issues in order to preserve the basic principles of biodiversity and the ecological approach to circular economy. For this reason, we also support ecological innovations.
OUR MILL IN BAMBERG
We are particularly proud of our own "water mill" near Bamberg, from which we obtain the flour for our products. The Sauer Mill is a so-called "long mill", which guarantees gentle grinding without damaging the flour thickness due to the length of its roll and ground surface. During this process, the grain passes through a reception and a mill cleaning system (vibrating screen, stone separator, grain separators, metal separator). The result is the best flour as the basis for our organic bakery products.

We guarantee you the highest quality product. We achieve this through a transparent supply chain - from the field through our mill to the end customer. Together with our long-standing business relationships with our organic farmers, producer groups and organic associations, we ensure the EU organic quality of our baked goods. The fact that our team is doing a very good job is shown by our awards such as the EU organic certification, the IFS certificate and DLG Gold.
