Quinoa is a cereal from the Bolivian altiplano. Quinoa has been cultivated for about 5,000 years. The Incas called it "the miraculous cereal" or "the golden fruit of the Andes." Today it is cultivated throughout the Andean zone and is an important part of the diet of the region's inhabitants.
Quinoa is known as one of the most nutritious and complete plant foods, its protein content is comparable to that of many animal foods such as meat, milk, eggs or fish. Quinoa grain also contains appreciable amounts of minerals like calcium, phosphorus, iron, as well as vitamins.
Quinua is the only vegetable food that provides all the amino acids essential for human life: sixteen amino acids are present, among which are the eight essential amino acids.
