Description: This pecorino is made with pasta fredda (cooked a 30°-32). The forms/wheels have a rough rind. The texture is semi firm and creamy, a very tasty cheese with a hint of fresh grass
This product will not be produced, due to the dry season of milk from August to the middle of December .
Maturing: minimum 60 days
Packaging: Vacuumed packed or paper
Expiry date: 6 months
Fridge Temperature: 8° - 10° products without vacuum-packed
Fridge Temperature: 4° - 6° products vacuum-packed
We advise keeping this product in its vacuum-pack for a maximum of 14 days as the cheese needs to breathe
The story on why we choose to call our cheese “Velathri”
The Etruscan city of Velathri, (Volaterrae, or modern Volterra) is located in Pisa provincia, Toscana (Tuscany) regione, northwest of Siena.
Velathri became one of the wealthiest cities of the Etruscan league thanks to its mineral wealth and the trading of metals such as iron, copper and tin (with the latter two used to make bronze).
