We make Sauerkraut the way grandma did!
Sweet, mature cabbage („Marner Lagerweiß“, a heirloom variety) is harvested on our biodynamic farm in Dithmarschen, a region in Northern Germany with a long tradition of growing cabbage. The „Krautmeister“, a master artisan with decades of experience, shreds the cabbage, adds high quality rock-salt from the „Luisenhaller“ salt mine in Göttingen and packs everything tightly into the glass jar. A special lid that allows venting while keeping the air out turns the jar into a fermentation vessel. Since fermentation takes place inside the sales package, the precious Sauerkraut juice is preserved.
