Short-term heating (SCE) enables preservation and stops fermentation and can be used for a wide variety of products. The schematic flow diagram runs to the following dimensions: The incoming product is pumped through the energy recovery of the heat exchanger, in this step heat energy is transferred from the hot outgoing product to the incoming product (energy recovery). The now preheated product is heated to the desired temperature in the pasteurizer section and kept for a certain time in the hot-holding section (HHS). This stabilised product now flows through the energy recovery and heats the incoming product.
This results in a very high energy efficiency and product stability with a compact design.
