Tradition is innovation.
From the creative force of Riccardo and Laura, the founders of the company, was born the idea to renew the Panettone tradition, the icon of Italian pastry, by respecting an healthier, tastier and more sustainable feeding.
Evvivo's project is started in 2013 by using different raw materials with more interesting nutritional and organoleptic properties such as stone ground flour, fresh farmhouse butter and extra virgin olive oil coming from selected, responsible, passionate agricultural producers, instead of conventional professional suppliers.
Especially regarding flour it is already used not only wheat but also spelt, an ancient grain which has a richer nutritional profile and, thanks to the stone milling process, preserves all its nutritional values and guarantees an unmistakable taste and aroma.
Since the inception the special Panettone with extra virgin olive oil was one of the most representative recipe of Evvivo production winning the favor of many consumers also for its excellent nutritional characteristics and lightness.
The use of top-notch extra virgin olive oil coming from selected olive growers located in different Italian regions ensures high levels of polyphenols and a source of vitamin E.
The mother yeast
The heart of process is the slow natural leavening with only sourdough, a special natural yeast called "pasta madre" in italian, cared for and refreshed several times a day, which contains an heterogeneous population of several yeast and bacterial strains.
The whole process is still today completely handmade and lasts three days, as it once was.
The result is the typical Panettone with extraordinary characteristics of softness, taste and digestibility.
Today the Evvivo organic Panettone is produced in two different kinds, traditional with butter or innovative with extra virgin olive oil, both in a wide variety of tastes with no preservatives and flavourings, from the Classic in the original recipe with raisin and candied orange peel, to the specialities with typical ingredients.
Taste and well-being live together in Evvivo. All recipes are specially balanced with less fat and less sugars and the use of simple, unrefined raw materials, most of wich are from small agricultural producers, ensures excellent nutritional and organoleptic features.
Research and development
The company's commitment is constantly aimed at the research and development of new products for the growing demand of organic certified and sustainable food also suitable for new lifestyles.
The range of products currently certified includes Panettone, Colomba, sweet biscuits and savoury snacks, suitable for many different food styles: vegetarian, vegan, lactose-free and dairy-free.
Evvivo products are sold at natural stores and selected specialty stores (Gourmet channel) such as organic chain store with excellent products.
In Milan, where the Panettone was born and where the company is based, Evvivo opens its own temporary stores every year during the Christmas season, the highest for sales.
Although the internationalization plan is just at the beginning, it is already possible to find the Evvivo Panettone at organic food stores in some of the major European cities: London, Zurich, Brussels, Munich, Paris, Amsterdam.
The packaging was created reusable and sustainable, with recycled and recyclable kraft cardboard, a natural material pleasant to the touch that communicates well the inspiring values of Evvivo making the product very recognizable and familiar.
