We take care of the wheat we've been grinding for centuries. We focus on a fine flour with natural qualities in full respect of each different variety of wheat. We search for the best grains we can find, both in Italy and abroad. We make functional, specialized and stable flours that, when used wisely, are essential to the final quality of the products and to the preservation of the flavors and original characteristics of whole, unrefined and genuine flours.
We have three production plants, in Padua, Parma and Perugia, in addition to 5 mills and experimental centers. We have 13 quality assurance employees, over 10 certifications and more than 400 references.
We devote our utmost attention to the good practices of the trade, therefore to the mixing of single-grain flours, to the flour resting times and to the mother yeast cultures. The Macinazione IntegrataTM (Integrated Milling technique) allows us to combine different techniques and processes in an innovative way: from visual selection to customized decortication, as well as from the progressive lamination rolling process to stone-crushing.
