Prometeo is located on the hills of central Italy and, since 1991, it is specialized in production of Farro, an ancient grain for a modern and healthy diet, the ancestor of all cereals and father of the agriculture. We entrust our seed, that is exclusively certified, to trustworthy farmers, who are constantly assisted during the whole agricultural process.
Prometeo follows and monitorates the supply chain in every detail: from production of its own seed, to the cultivation and transformation: this means a traceability process guaranteed, from the raw material to the finished product.
Since the very beginning, we have focused our attention particularly on two species of Farro:
Emmer Wheat, suitable for quality pasta products:
- whole semolina
- dehulled and pearled wheat
Einkorn Wheat, the father of all grains, perfect to produce flours and bakery products, with extraordinary nutritional properties:
- whole and semi-whole flours
- dehulled wheat
Prometeo’s productive system is one of a kind, that can offer to the consumer high quality products that preserve all the extraordinary healthy and nutritional properties of this precious wheat.
The milling takes place in our natural stone milling and we are able to obtain high quality semolinas and flours that find a perfect collocation in all the main sectors.

Prometeo company collaborates with more than 200 farmers and it exports to Europe, Asia, and United States. Prometeo’s business certifications are Bio UE, Biosuisse, JAS, NOP, Kosher.
