Lischeto Farm is situated in Alta Val di Cecina 5km from the Etruscan town of Volterra. In 1990 this farm was transformed into an Organic Agricultural Farm, which to this day it has established its name all around the world for its unique production of high quality organic Pecorino cheese.
The family run farm is surrounded by 200 hectars of land, situated on a hill right in the countryside with a marvellous panorama overlooking the luscious pastures, wild ravines and scoured cliffs called the “Balze“ and on the sky line of Volterra.
The farm breeds Sardian Sheep which graze on our organically grown fodder and cereal, which gives our milk a unique fragrance. This guarantees the production of great pecorino cheeses which enables us to provide a wide selection to please all needs in the European and North American market.
Our cheese is prepared with full fat raw sheep’s milk with animal or vegetable rennet. One of our most renowned cheeses produced on the farm is our “Pecorino delle Balze Volterrane”, this is a full-flavoured raw milk pecorino, thanks to our particular vegetable rennet that we use, the seeds from the wild artichoke. This gives it a pronounced smell of milk together with a hint of aromatic herbs. Thanks to this traditional recipe which is over a thousand years old and comes from the Tuscan region the where we are proudly situated we will soon be receiving the DOP certificate this particular product, which is a great achievement for us..
Lischeto also produces Extra-Virgin Olive Oil “Viride”, made from three types of olives; frantoio, moraiolo and leccino. Our extra virgin olive oil is produced from the first cold-pressing of the olives which are organically grown and hand-picked during the months of October to December. The olives are then immediately cold-pressed to preserve their qualities and nutritional properties, according to the principle of harmony that inspires all our work on the farm: a profound respect for nature and her rhythms. Viride is a smooth-bodied extra-virgin olive oil, with an intense perfume, slightly piquant with a very low PH which is perfectly digestible.
Giovanni Cannas with the help of his staff, allow guests to discover the secret and art of making cheese via our cooking lessons, cheese making lessons both for adults and children and varies other activities.
Our recently renovated Bio constructed Tuscan Farm house dates back to the 800’s, is an ideal place to spend your holiday in total relax away from the hectic city life. We are situated in the middle of the countryside surround by beautiful views "typical Tuscan countryside", which is another important aspect especially for children as this allows families to be tranquil while their children are playing safely within our property. It is also possible to see the farm animals together with our faithful donkey mascot “Orazio” .
Our restaurant has a warm, rustic and convivial atmosphere, where we prepare with care our home-style cooking traditional Tuscan and Sardian dishes using our own products; pecorino and extra virgin olive oil and many other organic and genuine products from our area. It is important for us to please all our guests and we like to cater for all needs, such as vegetarians, vegans and for those who have dietary problems and intolerances etc.
For art lovers, you will find varies sculptures all around the farm created by Foreign and Italian artists, just like an Open air museum.
