Sardinian pasta with a tasty history!

Fregola pasta originates from Sardinia and is similar to large Arabian couscous grains – also known as pearl couscous. On Sardinia, it’s hard to find a restaurant where fregola is not on the menu. But outside Sardinia too, fregola is vastly appreciated for its structure and taste and for the authentic dishes which you can cook with this type of pasta.

Traditionally, Sardinians use fregola in soup, meat-or fish stock or they prepare the pasta like they would prepare risotto, combined with tomatoes and vongole or with Sardinian sheep cheese. However, Fregola is a product that lends itself to any type of dish, hot or cold. It’s a surprising alternative to rice, but you can also add vegetables and other ingredients to chilled fregola, in the same way as you would add these to salads based on couscous, bulgur and various other grains.

Fregola is made of coarse wheat flour (semola) and GreenAge offers you 2 varieties: Fregola Sarda and Fregola Sarda Tostata.
