Organic Date Balsam Vinegar: Mediterranean-Oriental fusion gourmet cuisine

An intensely acidic aftertaste, gently wrapped in a soft, warm layer of sweetness is the distinguishing characteristic of our Organic Date Balsam Vinegar: a sumptuous infusion that expands the familiar range of exquisite balsamic vinegar with a unique, new twist. Our Date Balsamic Vinegar is only a little lighter in appearance and, as such, differs very little from traditional balsamic vinegars with a glistening, golden to dark caramel colour that turns a deep and concentrated brown tone in the spoon. However, the flavour is noticeably milder and smoother than grape-based vinegar varieties, giving it its own, unique appeal. Even a sniff of the aroma reveals the enveloping sweetness of the dates before the acidity of the vinegar: a true gourmet product with an international provenance.

What makes our high-quality Date Balsam Vinegar so special?

Unlike modern white vinegars, date vinegar has a long tradition that extends over several millennia. It is likely that grape-based vinegars were created later. While hardly any fermented products containing alcohol are made from dates due to religious restrictions, vinegar has been produced from date syrup or palm juice since time immemorial. Leading producer countries include Iran, Iraq and Saudi Arabia. Our Date Balsamic Vinegar is made in Iran by a small producer, though with one unique and revealing characteristic: our producers spent several years in northern Italy, living in the region around Modena, where they became familiar with aceto balsamico di Modena and studied its manufacturing process. Inspired by what they had learned, they took the recipe back home with them to Iran, creating a unique product that blends the traditions of their Iranian homeland with those of Italian haute cuisine. Fresh Mazafati dates are processed into syrup before being thoroughly thickened, fermented, and ripened over several years in oak barrels. The product owes its exquisite, fruity sweetness to this process – as well as the tannins and other essences that are derived from the wood used in the barrels.

Date vinegar: natural pleasure for the whole being

As you would expect with high-quality vinegar, date vinegar features only a single ingredient: organically cultivated dates. Everything else is done by the sun, time, heat, storage, and fermentation. It’s scarcely possible to imagine a more natural product. Due to an acid content of 3.5% and the natural fruit sugar, the vinegar lasts for a long time, while tannins from the storage process prevent oxidation, while its full-bodied sweetness derives exclusively from its source, namely date syrup. Just like date syrup, date vinegar has a long tradition of use as a healing remedy in the Arab world, as can be seen in the works of the famous Persian scholar and physician, Ibn Sina, a.k.a. Avicenna.
