Aroma: The nose presents a fruity aroma of green olives, leaf green, walnut, other ripe fruit, mainly green apple, fennel tomato and artichoke.
Flavor: Sour Medium Balanced: Slightly bitter and spicy, nutty flavor, olive leaves, tomato and artichoke.
Assembly: For its classification is an oil that matches perfectly with any dish, especially salads, fresh vegetables, fish, desserts, fresh cheeses, sauces and meats.
Collection and Processing Techniques: In the elaboration process, aspects such as maturity index, pulp / bone ratio characteristics, shake temperatures, never above 20 degrees have been taken into account, something that has been possible, thanks at the altitude of the cultivation areas, so there was no possibility of heating the fruit in the field, also the times of batter of the dough, which have never exceeded 15 min., needing for each liter of oil the approximate amount of 9 kg. of olives.
