Organic Extra Virgin Olive Oil Al Alma del Olivo, HOJIBLANCA variety, is made from olives trees of the HOJIBLANCA variety, cultivated by the ecological production system of our olive groves, these are located in the municipality of Villasequilla, in the province of Toledo, 650 meters above sea level This altitude, coupled with the genetic characteristics of the HOJIBLANCA variety, make the Al Alma del Olivo EVOO HOJIBLANCA a healthy food, given its high content of Polyphenols and its high percentage of Oleic Acid, more than 75% and that it is an EVOO with intense aromatic profiles and with great oxidative stability.

Our olive groves are fully integrated with the local fauna and flora, also having their own aquifers, streams that flow into the Algodor river; rabbits, hares, bustards, Bonelli's eagles, etc. ... coexist in our farm with the peace of mind that we do not use phytosanitary products that can alter the ecosystem that gives them shelter, not in vain our olive groves guarantee the future of the biodiversity of the surrounding area.

The harvesting process is carried out using an inverted umbrella with trunk vibrator, which prevents the olive from falling off the olive tree, and falling on the ground, guaranteeing the absolute cleanliness of the fruit before entering the mill, it is an EVOO of pago, since the oil mill is located in the farm itself, this means that not even two hours have passed since the olive is harvested, until the juice is extracted in our oil mill.

The extraction process is done by the two-phase extraction system, of very low and sometimes null water consumption, in order to keep the physical and chemical characteristics of our EVOOs intact, in our olive mill we have the implantation of the HACCP, absolute traceability control and this year we will certify the oil mill in IFS Food, in order to guarantee our customers, the total food safety of our EVOOs. Short kneading times, low process temperatures, minimal water use and static production classification, all our production is classified as Extra Virgin Olive Oil.

The Al Alma del Olivo Organic HOJIBLANCA Variety EVOO  is characterized by the intense green color, almost emerald, this is mainly due to the fact that the olives are collected with a very low maturity index in order to extract the highest possible quality, this low incidence of Maturity makes it have a high content of chlorophylls, which behave as natural antioxidants, its aroma is intense, with a fruity green olives, notes of freshly cut grass, fig leaves and ripe tomato, in the mouth it behaves with delicacy, being soft and sweet, they are a flavor of vegetables, almonds and banana peel, with a light itching and final bitterness, typical of an EVOO of early collection and high content of polyphenols and tocopherols. Authentic Natural Olive Juice.
