The "Flower of the Oil" ("Flor de Aceite" in Spanish) extra virgin olive oil comes from a project in Catalonia in Spain. A small, disused oil mill has been given a new lease of life in order to obtain this precious oil using traditional, artisanal methods. As the oil undergoes no filtering, many valuable essential ingredients are retained which give it its particularly intense and characteristic flavour.
For this cold-dripped oil, the olive varieties Arbequina and Empeltre Aragon are ground according to the old tradition in a stone mill. The oil which drips out of the resulting paste is collected and bottled without being filtered. The otherwise typical pressing method is not used. The cloudiness is a sign of quality and indicates a particularly natural production method.
