From the respect for Nature, from the organic viticulture since 1995, the wines of the Azienda Agricola Cossentino are born, located on the hilly part of the Gulf of Castellammare, in Lavatore and Costa di Bisaccia land (350/450 mt), one of the most beautiful and suggestive areas of Production of DOC Alcamo. Traditional native vines such as Catarratto, Inzolia, Grillo and Nero D’Avola have been joined alongside vineyards such as Chardonnay, Cabernet Sauvignon, Merlot and Syrah, which in these lands have found unbeatable weather conditions for maturing and producing great wines . Care and devotion to the environment make these wines great.
Of the highest quality, internationally renowned by renowned awards, they are a precious expression of a deep and intimate bond with nature, an unconditional love full of passion. The high plant density (5000 strains per hectare) and the method of pruning aimed at obtaining low yields are additional guarantees for the quality of the grapes which, when fully ripened, are harvested strictly by hand and placed gently in cassettes. Processing in the same company, just minutes away from harvesting and rapid cooling of the pressed fruit, guarantee the grapes the preservation of the fruit fragrance during the winemaking process. Only for red wines, careful use of wood, 500 liter tonneau and 10 and 20 hl barrels, for optimum maturation to safeguard the fruit, carefully caring for new and second-hand barrels.
So from bunch to refinement, we follow the wine in its evolution with the utmost care and delicacy, so that it can develop its personality better and express that perfection that is just great wines. Olive trees scattered throughout the farm integrate production with refined oils that we propose in the Biancolilla and Cerasuola varieties. The method of organic farming practiced according to Reg. EEC 2092/91 is our duty to respect humans, nature and consumers.
