The product consists of the pollen pellets that bees collect from the flowers and plants they visit, which are captured by dedicated traps positioned at the entrance to the apiary before being cleaned and dehumidified.
The colour of the product varies depending on the flower species it is extracted from, ranging from light yellow through dark yellow, to shades of brown, black and even green. The plant-like smell is reminiscent of hay or straw. The flavour is vegetal, with a bitter note that varies in intensity depending on the period of production and the flower species present.

Our strong and healthy, lovinglybred bees produce honey of the highest quality, thanks to the implementation of traditional beekeeping techniques.
A creamy honey, finely crystallised, with an extremely fresh, rich, and natural taste and with excellent nutritional qualities.
Solmielato combines ancient beekeeping traditions with the use of modern automatic machines, guaranteeing a fresh, high-quality end-product while respecting the unique characteristics of the raw material.
Food quality and safety is guaranteed by the IFS foods international certification.
Raw honey, a “Raw food” that retains its organoleptic characteristics intact, thanks to the cold-extraction process, which uses systems that rely on the effect of centrifugal force.
Cold extraction guarantees maximum hygiene without altering the organoleptic characteristics of our honey.
The honey is stored at a temperature of 12 °/14 °C, ensuring it’s quality remains unaltered. Because packaging requires the honey to be softened, we maintain it at a temperature always below 40 °C for a period of 48 hours. As a result, we package our honey without ever melting it and protecting its wonderful characteristics.
Solmielato honey is the work of bees living in Sicily’s and Calabria’s heritage woods. The bees roam freely the uncultivated and uncontaminated lands, far from pesticides and any type of pollution. More than 1000 bee families produce every year over 100 tons of honey, royal jelly, and pollen in harmony with their ecosystem and following their own natural biological rhythm.
Solmielato honey relies on organic beekeeping. We have carefully selected the healthiest bee strains, naturally resistant to disease; we keep our bee colonies safe and well-nourished, providing our bees with abundant stocks of food and clean hives wellprotected from moisture.
Nomadism involves placing hives in woods and organic farms, during blooming periods. At the end of a specific blooming period, the bees are relocated to the vicinity of fields starting to bloom. This entirely natural method allows beekeepers to produce a wide variety of single - and mixed - flower honeys.
