Our Cravot ubriaco is a new specialty of our dairy. It is a seasoned goat cheese obtained with a processing with microbial rennet. The dough is very crumbly thanks to a long seasoning (around 60 days).
After the seasoning, the product is put in a tank with wine (red or white), where it stays for other 30 days.
The result is a cheese which releases a particular wine flavour, very pleasant and tasty.
