Critical consumers like to combine taste, flavour and a clear conscience: fewer animal-based foods mean less of a burden and strain on our environment – this is only one point where vegan and organic meet. On the German organic products market the sales share accounted for by vegetable-based products has constantly increased.
There is also increasing demand for animal-free foods in the external catering sector. In this context, the chefs and guests are benefiting to an equal extent – from the canteen and commercial kitchen to top-class restaurant. The creative potential for the canteen kitchen will be examined in specialist presentations and practically-orientated tasting sessions.
