Everything about Olive Oil - From Origin via Taste to Shelf Life
„extra virgin“ is the most appraised kind of olive oil by consumers. It is gently produced and free from sensory defects. Many consumers also appreciate olive oils from certain origins. Olive oil from different origins have different taste, and the taste can be described by sensory evaluation. But olive oil is also a delicate food, which is best when consumed freshly. All this can now be tested in a rapid test, enabled by magnetic spin resonance, short NMR. From a short measurement, NMR delivers a quantitative fingerprint of the constituents and ingredients of an oil. This fingerprint is characteristic for origin, quality and also sensory profile. But olive oil changes over time while sitting on the shelf and especially after opening. This years presentation combines tasting of olive oil with a scientific description of the processes associated with ageing of olive oil highlighting does and don’t does.
