Unfortunately, many Europeans are unaware of menu options that go much beyond sushi. Because of repeated legal bans on meat consumption over the course of Japan’s long history, there is an incredible abundance of vegan and vegetarian dishes. Josita Hartanto has been inspired by these Japanese classic dishes and presents some of her own interpretations today.
